Stuffed French Toast

Ingredients
  

  • French Toast:
  • 4 slices Lewis Bake Shop
  • 2 large eggs
  • ¼ cup unsweetened almond milk
  • 2 tablespoons heavy cream
  • teaspoons vanilla extract
  • ½ teaspoon cinnamon
  • 1 tablespoon monk fruit sweetener or allulose
  • 1 tablespoon butter for cooking
  • Cream Cheese Filling:
  • 4 oz cream cheese softened
  • 1 tablespoon powdered monk fruit sweetener
  • 1 teaspoon vanilla extract
  • Optional: ¼ teaspoon vanilla bean paste
  • Optional Toppings:
  • Fresh strawberries
  • Sugar-free syrup
  • Cinnamon
  • Powdered monk fruit sweetener
  • Chopped pecans

Method
 

  1. In a bowl, mix together: cream cheese, powdered sugar, vanilla extract.
  2. Mix until smooth and creamy.
  3. Spread the filling onto 2 slices of keto bread.
  4. Top with the remaining slices to create sandwiches.
  5. In a shallow bowl, whisk together: eggs, almond milk,heavy cream,vanilla,cinnamon, sweetener
  6. Quickly dip each sandwich into the custard mixture on both sides.
  7. Do not oversoak. Keto bread absorbs liquid quickly.
  8. Heat butter in a skillet over medium-low heat.
  9. Cook each side for about 3–4 minutes until: golden brown outside and warm, creamy inside
  10. Top with: berries, cinnamon, sugar-free syrup, powdered sugar.
  11. Serve warm.

Notes

We tested this recipe multiple ways and found that keto bread becomes too soft if soaked too long in the custard. For best results, quickly dip each side and cook over medium-low heat so the center warms through without burning the outside
