Yogurt Popsicles

Ingredients
  

  • cups plain Greek yogurt 2% or 5% for a creamier texture
  • ½ cup unsweetened almond milk or coconut milk for richness
  • 1 –2 tablespoons Splenda to taste
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 1 cup mixed berries fresh or frozen — strawberries, blueberries, or raspberries
  • Optional: 1 tablespoon chia seeds for extra fiber and texture

Method
 

  1. Blend yogurt, almond milk, Splenda, vanilla, and lemon juice until smooth.
  2. Add half the berries to the blender and pulse for a swirl of color and flavor.
  3. Fold in the remaining whole berries for texture.
  4. Pour into popsicle molds, leaving a little room at the top.
  5. Freeze for 4–6 hours, or until completely solid.
  6. To serve, run the mold under warm water for a few seconds and pop them out.
