Vegan French Toast Casserole

Ingredients
  

  • For the casserole:
  • 6 cups cubed keto or low-carb vegan bread
  • 1 ¾ cups unsweetened soy milk or almond milk
  • ¼ cup full-fat coconut milk
  • 3 tbsp ground flaxseed egg replacer
  • 3 tbsp monk fruit or erythritol
  • 2 tbsp melted coconut oil or vegan butter
  • 2 tsp vanilla extract
  • 1 ½ tsp ground cinnamon
  • ¼ tsp nutmeg
  • Pinch of salt
  • Optional: ½ cup fresh berries or ⅓ cup chopped pecans
  • Sugar-Free Maple Glaze Optional
  • 2 tbsp vegan butter or coconut oil
  • 2 tbsp sugar-free maple syrup Lakanto or ChocZero
  • ¼ tsp cinnamon
  • 1 tbsp almond milk

Method
 

  1. Prep your bread: use day-old or lightly toasted low-carb bread.
  2. In a large bowl, whisk together soy milk, coconut milk, flaxseed, sweetener, oil, vanilla, cinnamon, nutmeg, and salt. Rest 5 minutes.
  3. Add bread cubes; toss until fully coated.
  4. Spread into a greased baking dish and press down lightly.
  5. Let soak 30 minutes (or cover overnight).
  6. Bake at 350 °F / 180 °C for 35–40 minutes, until golden and slightly crisp on top.
