Taco Salad Dip

Ingredients
  

  • Base Layer:
  • ½ cup Greek yogurt
  • ½ cup sour cream
  • 1 –2 tsp taco seasoning low-sodium
  • Ground Beef Layer:
  • 1 lb ground beef 85–93% lean
  • 1 –2 tbsp taco seasoning
  • Splash of water
  • Queso Layer
  • Use one of these:
  • ½ –1 cup low-carb queso
  • OR
  • ½ cup cream cheese
  • ¼ cup shredded cheddar
  • Splash of heavy cream
  • Optional Bean Layer
  • Ultra-low-carb options
  • ½ cup refried black beans no sugar added
  • OR mashed black soybeans
  • Fresh Layers:
  • 1 cup shredded lettuce
  • ½ cup diced tomatoes drained
  • ¼ cup diced red onion optional
  • ¼ –½ cup sliced black olives
  • Cheese Layer:
  • ½ –1 cup shredded cheddar
  • Finishing Layer:
  • Diced avocado or guacamole
  • Fresh cilantro
  • Lime juice
  • Jalapeños optional

Method
 

  1. Stir together: Greek yogurt, sour cream and taco seasoning.
  2. Spread in the bottom of a serving dish.
  3. Cook the Ground Beef. Drain any excess fat.
  4. Add taco seasoning + splash of water.
  5. Let cool slightly and spread over the creamy base.
  6. Warm your queso so it spreads easily.
  7. Pour or spoon over the beef layer.
  8. Spread a thin layer of refried black beans if using.
  9. Add Fresh Layers: Shredded lettuce, tomatoes, black olives, red onion (optional)
  10. Sprinkle shredded cheddar over the top.
  11. Finish with Healthy Fats: Avocado or guacamole
  12. Best served with: Quest Nacho Cheese Protein Chips
