Rotisserie Chicken Salad

Ingredients
  

  • Salad Base:
  • 1 store-bought rotisserie chicken shredded
  • 2 cups coleslaw mix or shredded cabbage
  • ½ cup shredded carrots
  • ¼ cup red onion thinly sliced
  • 2 tbsp green onions chopped
  • 2 tbsp sliced almonds or cashews
  • 1 tbsp sesame seeds
  • ½ cup mandarin orange segments
  • Sesame Dressing:
  • 4 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp sesame oil
  • 2 tbsp olive oil
  • 2 tsp fresh grated ginger
  • 2 tsp minced garlic
  • 2 tsp honey or monk fruit sweetener
  • juice of 1 lime
  • pinch salt
  • pinch black pepper

Method
 

  1. Shred the rotisserie chicken breast and dark meat into bite-size pieces.
  2. In a large bowl, combine: cabbage slaw, shredded carrots, red onion,
  3. green onions
  4. In a small bowl whisk together: soy sauce, rice vinegar, sesame oil, olive oil, ginger, garlic, honey, lime juice
  5. Add the shredded rotisserie chicken meat to the bowl of vegetables.

Notes

We tested this recipe multiple ways and found that using freshly shredded rotisserie chicken breast gives the best texture and flavor. For best results, toss the salad right before serving so the cabbage stays crisp and the dressing evenly coats the chicken.
