Italian Sausage Stuffed Mushrooms

Ingredients
  

  • 20 cremini mushrooms baby bellas, stems removed and finely chopped
  • ½ lb Italian sausage casing removed
  • 1 tsp olive oil
  • 2 cloves garlic minced
  • ¼ cup chopped onion or shallot
  • 4 oz light cream cheese softened
  • ¼ cup grated Parmesan cheese
  • 1 tbsp chopped parsley or basil
  • ½ tsp Italian seasoning
  • Salt & black pepper to taste
  • Olive oil spray for browning

Method
 

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Clean mushrooms gently with a damp paper towel. Remove stems and finely chop them.
  3. In a skillet over medium heat, add olive oil and sausage.
  4. Cook until browned, about 6–7 minutes, breaking it up with a spoon.
  5. Add the chopped stems, onion, and garlic.
  6. Sauté 3–4 minutes until soft and fragrant. Remove from heat and let cool slightly.
  7. In a medium bowl, combine the sausage mixture with cream cheese, Parmesan, herbs, and Italian seasoning.
  8. Stir until creamy and cohesive. Taste and adjust with salt or pepper.
  9. Spoon 1–2 teaspoons of the filling into each mushroom cap.
  10. Arrange on a parchment-lined baking sheet and lightly spray with olive oil.
  11. Bake 18–20 minutes or until golden and bubbly.
  12. (Optional: Broil 1–2 minutes for a crispy, golden top.)
