Method
- Cut pork shoulder into 4–6 chunks
- In a bowl, mix:Orange juice, lime juice, olive oil, garlic and spices.
- Pour over pork and let sit 30 minutes (or overnight)
- Set Instant Pot to Sauté
- Sear pork pieces 2–3 minutes per side
- Add marinade + chicken stock + onions
- Cook on High Pressure for 45 minutes
- Natural release for 10–15 minutes
- Remove and shred
- Return to pot and let soak in juices
