Instant Pot Mojo Pork

Ingredients
  

  • 2 –3 lb boneless pork shoulder pork butt
  • ¼ cup fresh orange juice
  • ¼ cup lime juice
  • ½ cup chicken stock cooking liquid
  • 2 tbsp olive oil
  • 6 –8 cloves garlic minced
  • 1 tsp oregano
  • 1 tsp cumin
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • 1 small onion sliced

Method
 

  1. Cut pork shoulder into 4–6 chunks
  2. In a bowl, mix:Orange juice, lime juice, olive oil, garlic and spices.
  3. Pour over pork and let sit 30 minutes (or overnight)
  4. Set Instant Pot to Sauté
  5. Sear pork pieces 2–3 minutes per side
  6. Add marinade + chicken stock + onions
  7. Cook on High Pressure for 45 minutes
  8. Natural release for 10–15 minutes
  9. Remove and shred
  10. Return to pot and let soak in juices
