Instant Pot Korean Short Rib

Ingredients
  

  • 4 pounds flanken beef short ribs bone-in style short ribs
  • ¾ cup low-sodium soy sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons garlic chili paste gochujang-style
  • 1 tablespoon rice vinegar
  • ½ teaspoon black pepper
  • ½ teaspoon crushed red chili flakes
  • 3 cloves garlic minced
  • 1 tablespoon fresh grated ginger
  • ½ cup beef broth
  • Sesame seeds
  • Sliced green on

Method
 

  1. Whisk soy sauce, sesame oil, gochujang, garlic, ginger, vinegar, pepper, and broth.
  2. Add beef short ribs and toss to coat. Let sit for 15–30 minutes to absorb flavor.
  3. Place ribs directly into the Instant Pot. Pour sauce over the ribs.
  4. Seal and cook on HIGH pressure for 30 minutes.
  5. Allow natural release for 10 minutes before carefully venting.
  6. Pressure cooking is what makes these Korean short ribs tender in such a short time compared to oven or slow cooker methods.
  7. Remove ribs and set aside.
  8. Turn Instant Pot to sauté and simmer sauce 5–8 minutes until slightly thickened.
