Method
- Using kitchen shears, cut down the top of the lobster shell lengthwise.
- Gently lift the lobster meat over the shell, keeping it attached at the base.
- Pat the lobster meat dry with paper towels.
- Melt the butter in a small bowl.
- Stir in minced garlic, lemon juice, salt, and black pepper.
- Mix until fully combined to create the garlic butter sauce.
- Preheat the oven to HIGH BROIL and position the rack about 6–8 inches below the broiler.
- Place lobster tails meat-side up on a foil-lined baking sheet.
- Brush the lobster generously with the garlic butter sauce.
- Broil for 8–10 minutes, depending on size, until the lobster meat is opaque and cooked through.
- Spoon remaining butter sauce over the lobster before serving.
Notes
We tested this garlic butter lobster using different lobster tail sizes and found that 4–6 oz lobster tails cook best under the broiler without becoming rubbery. For best results, avoid overcooking and brush the lobster with butter halfway through cooking to keep the meat moist.
