Fruit Salad

Ingredients
  

  • 1 cup strawberries sliced
  • 1 cup blueberries
  • 1 cup blackberries
  • 1 cup raspberries
  • 2 oranges peeled and segmented
  • Juice of 1 lime
  • 1 –2 tablespoons stevia sweetener
  • –½ cup crumbled feta cheese
  • Optional: fresh mint leaves

Method
 

  1. Wash and dry all the fresh fruit. Slice the strawberries and peel the oranges into segments.
  2. In a small mixing bowl, whisk together the lime juice and stevia until combined.
  3. Add the strawberries, blueberries, blackberries, raspberries, and oranges to a large mixing bowl.
  4. Pour the lime dressing over the fruit and gently toss to coat evenly.
  5. Top the fruit salad with crumbled feta cheese and garnish with fresh mint if desired

Notes

We tested this fruit salad multiple ways and found that adding the feta right before serving keeps the texture fresh and creamy. For best results, chill the fruit before mixing so the salad stays cold and refreshing without becoming watery.
