Easy Taco Bake

Ingredients
  

  • 1 lb ground beef
  • ½ onion chopped
  • 1 tablespoon minced garlic
  • 1 packet taco seasoning about 1 oz or 2–3 tbsp
  • 1 10 oz can diced tomatoes
  • 2 large eggs
  • ¼ –½ cup sliced olives
  • 1 –1½ cups shredded cheese cheddar or Mexican blend
  • Salt + pepper to taste

Method
 

  1. Cook ground beef in a skillet over medium heat until browned. Drain excess grease.
  2. Add chopped onion and cook for about 3 minutes.
  3. Add garlic and cook for another 1–2 minutes.
  4. Stir in taco seasoning and mix well with the beef.
  5. Transfer the beef mixture to a baking dish.
  6. Add diced tomatoes and mix.
  7. Add eggs and stir until combined.
  8. Mix in olives.
  9. Top with shredded cheese.
  10. Bake at 350°F for 30–35 minutes until the center is set.
  11. Let sit for 5 minutes before serving.

Notes

We tested this taco bake casserole with tomatoes added directly to the baking dish and found that baking closer to 35 minutes helps the eggs fully set. For best results, let the taco bake rest for at least 5 minutes before serving so it holds together better when sliced.
