Doner Kebab Recipe

Ingredients
  

  • Doner Kebab Meat:
  • 1 lb ground beef or ground lamb
  • ¼ cup onion finely grated and squeezed dry
  • 2 tbsp plain Greek yogurt
  • 1 tbsp olive oil
  • 1 tbsp paprika
  • 1 tbsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 cloves garlic minced
  • 1 –2 tbsp lemon juice
  • Simple Salad:
  • 1 cup chopped tomatoes
  • ½ cup chopped cucumber
  • 2 tbsp sliced red onion
  • 1 tbsp olive oil
  • Salt
  • Yogurt Sauce:
  • ½ cup plain Greek yogurt
  • 1 clove garlic
  • Pinch salt
  • Lemon juice
  • Base Options:
  • Romaine lettuce
  • Cauliflower rice
  • OR small portion white rice

Method
 

  1. In a bowl, combine ground beef, grated onion, yogurt, olive oil, spices, garlic, and lemon juice. Mix until well combined and slightly sticky.
  2. Place the meat between two sheets of parchment paper. Press into a thin, even layer.
  3. Preheat oven to 425°F. Transfer the parchment with meat onto a baking sheet and bake for 12–15 minutes.
  4. Broil for 2–4 minutes until the edges become slightly crispy.
  5. Let the meat rest briefly, then slice into thin strips.
  6. Layer your base, doner kebab meat, salad, and yogurt sauce.

Notes

We tested this recipe using both a thicker and thinner meat layer and found that pressing the meat very thin produces the best crispy edges and texture. For best results, broil at the end and avoid overcrowding the pan.
