Cream Cheese Stuffed Dates

Ingredients
  

  • 8 Medjool dates pitted
  • 3 oz Neufchâtel cheese or light cream cheese, softened
  • ½ tsp vanilla extract
  • ¼ tsp ground cinnamon
  • Small pinch of salt
  • Optional: sliced almonds or chopped walnuts for topping

Method
 

  1. Using a paring knife, slice each date lengthwise just enough to remove the pit and create a small pocket. Keep one side intact so the date holds its shape.
  2. In a small bowl, combine Neufchâtel cheese, vanilla, cinnamon, and salt. Stir until smooth and creamy.
  3. Spoon or pipe the cinnamon-cream-cheese filling into each date, letting it slightly round at the top
  4. Press sliced almonds or chopped walnuts gently on top for crunch and presentation.
