Method
- Dice all vegetables into small, even pieces for a balanced texture.
- Add avocado, black beans, tomatoes, bell pepper, jalapeño, onion, and cilantro to a large bowl.
- Whisk olive oil, lime juice, vinegar, spices, salt, and pepper.
- Pour dressing over the mixture and toss gently.
- Add cotija cheese last and lightly mix. Let sit 10–15 minutes before serving.
Notes
We tested this cowboy caviar recipe with and without corn and found that removing corn significantly improved blood sugar balance without sacrificing flavor. For best results, keep the black beans to ¼ cup and add the cotija cheese at the end to maintain texture.
