Chicken BLT Salad

Ingredients
  

  • 4 cups chopped romaine lettuce or mixed greens
  • 1 cup cherry tomatoes halved
  • 1 cup shredded rotisserie chicken skin removed if preferred
  • 4 slices turkey bacon cooked and crumbled
  • ½ avocado diced
  • 2 boiled eggs sliced (optional, for extra protein)
  • ¼ cup shredded cheddar or mozzarella optional
  • Dressing:
  • cup plain Greek yogurt
  • 1 Tbsp light mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp lemon juice
  • 1 garlic clove minced (or ¼ tsp garlic powder)
  • Salt and black pepper to taste
  • Splash of water or unsweetened almond milk to thin if needed

Method
 

  1. Place the lettuce and cherry tomatoes in a large bowl.
  2. Add the shredded chicken, turkey bacon, avocado, eggs, and cheese.
  3. In a small bowl, whisk Greek yogurt, mayonnaise, mustard, lemon juice, garlic, salt, and pepper until smooth. Thin with water if you prefer a lighter consistency.
  4. Drizzle the dressing over your salad and toss gently. Serve immediately.
