Crispy air fryer chicken breast cutlet with Caesar salad on top

Caesar Salad Chicken Cutlets

Ingredients
  

  • 2 chicken breast cutlets thin
  • ½ cup almond flour
  • ¼ cup grated parmesan cheese
  • 1 egg
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt and pepper
  • Olive oil spray
  • Caesar Salad:
  • 2 cups romaine lettuce
  • 2 tbsp parmesan cheese
  • Caesar Dressing
  • 2 tbsp mayonnaise
  • 1 tbsp olive oil
  • 1 tsp Dijon mustard
  • 1 tsp lemon juice
  • 1 garlic clove minced
  • Optional: 1 teaspoon anchovy paste
  • Salt and pepper

Method
 

  1. Pound chicken breast into thin cutlets
  2. Season with salt and pepper
  3. Dip into beaten egg
  4. Coat with almond flour, parmesan, and seasoning mixture
  5. Press breading firmly so it sticks
  6. Preheat air fryer to 400°F
  7. Spray chicken with olive oil
  8. Place in air fryer basket in a single layer
  9. 8–10 minutes total
  10. Flip halfway through
  11. Spray again after flipping
  12. Make the Caesar Salad:
  13. Toss romaine lettuce with parmesan
  14. Mix dressing separately, then combine
  15. Assemble:
  16. Place crispy chicken cutlets on a plate
  17. Top with Caesar salad
  18. Finish with lemon juice and extra parmesan

Notes

We tested this recipe multiple ways and found that pounding the chicken very thin is what creates the best crispy air fryer texture. For best results, we recommend spraying the breaded chicken with olive oil before and after flipping to help the crust turn golden and not dry.
