Breakfast Smashed Tacos

Ingredients
  

  • 4 Siete almond flour tortillas
  • ½ lb ground breakfast sausage
  • 4 eggs
  • 4 slices bacon
  • 1 avocado
  • ¼ cup shredded cheese
  • 1 tablespoon butter or avocado oil
  • Salt and pepper

Method
 

  1. Cook bacon over medium heat until crispy; set aside.
  2. Press sausage onto tortillas in a thin layer.
  3. Cook sausage-side down in a skillet until cooked through.
  4. Flip and warm the tortilla side.
  5. Scramble eggs in the same skillet.
  6. Assemble tacos with eggs, bacon, cheese, and avocado.

Notes

We tested this recipe multiple ways and found that cooking the sausage directly onto the almond flour tortilla creates the best texture without drying it out. For best results, cook over medium heat and flip carefully to prevent cracking.
