Ingredients
  

  • 2 4-ounce goat cheese logs
  • 2 large eggs beaten
  • 1 cup crushed pork rinds
  • 4 cups avocado oil for frying
  • Optional seasonings:
  • Garlic powder
  • Black pepper
  • Italian seasoning

Method
 

  1. Slice the goat cheese logs into rounds.
  2. Place the slices on a parchment-lined plate or tray and freeze for 15–20 minutes until firm.
  3. Beat the eggs in a bowl.
  4. Dip each goat cheese round into the egg, then coat with crushed pork rinds.You may need to gently press the pork rinds onto the goat cheese to fully coat the sides and help the breading stick.
  5. Heat the avocado oil in a deep skillet or small pot over medium heat.
  6. Carefully add the goat cheese rounds. The oil should come partially up the sides of the cheese.
  7. Fry each side for about 30 seconds, or until golden brown and crispy.
  8. Transfer to a paper towel-lined plate before serving

Notes

We tested this recipe using partially frozen goat cheese and found that freezing the cheese before breading helped it stay together while frying. Pressing the crushed pork rinds onto the goat cheese also helped create a crispier coating that stayed attached better during cooking.
