Ingredients

  • 1/2 cup fresh Cutie juice
  • 1 cup plain Greek yogurt
  • 1/2 teaspoon vanilla extract
  • 3 packets stevia about 3/4 teaspoon
  • 1/2 teaspoon orange zest optional
  • 2 to 3 tablespoons unsweetened almond milk optional for thinning

Method

  1. Peel and squeeze your Cuties until you have about 1/2 cup of juice. Remove any seeds. For a smoother texture, strain the juice.
  2. In a bowl or blender, combine the Cutie juice, Greek yogurt, vanilla extract, and 3 packets stevia (about 3/4 teaspoon). Add orange zest if using.
  3. Taste the mixture before freezing. Frozen desserts taste a little less sweet once set, so you want the mixture slightly sweet but not overpowering.
  4. Pour the mixture into popsicle molds or into a small parchment-lined dish if you want to slice it into bars late
  5. Freeze for 4 to 6 hours, or until fully set.
  6. If freezing in a dish, let it sit at room temperature for a few minutes before slicing into orange dream bars.

Notes

We tested this recipe with both whole blended mandarins and freshly squeezed Cutie juice, and found that strained juice gave the smoothest creamsicle texture. For best results, we recommend using plain Greek yogurt for a creamy texture and a little protein, and using 3 packets of stevia, which is about 3/4 teaspoon, for balanced sweetness.
