How to Make Breakfast Smashed Tacos

Cook the Bacon

Heat a skillet over medium heat and cook the bacon until crispy. Transfer to a paper towel-lined plate and set aside.

Smash the Sausage

Divide the ground sausage into equal portions. Press a thin, even layer of sausage directly onto one side of each almond flour tortilla.

Cook the Smashed Tacos

Place the tortillas sausage-side down a skillet over medium heat. Cook until the sausage is fully cooked and crispy, about 3–4 minutes. Flip and warm the tortilla side for 1–2 minutes. Remove and set aside.

Scramble the Eggs

Lower the heat slightly and add butter to the skillet. Scramble the eggs gently until just set and fluffy.

Assemble

Top each smashed taco with scrambled eggs, crispy bacon, shredded cheese, avocado, and green onion if using. Serve warm.
