  • Don’t skip the sear if possible
  • Keep liquid balanced — too much can dilute flavor
  • Let pork sit in juices after shredding
  • Broiling = game changer

Diabetic-Friendly Serving Ideas

  • Over cauliflower rice
  • In lettuce wraps
  • Mojo pork bowls with avocado
  • On a salad with olive oil + lime
Does chicken stock dilute mojo pork?

No — when using about ½ cup, it enhances moisture and creates a flavorful cooking liquid without weakening the citrus garlic flavor.

Can I make mojo pork without sugar?

Yes — traditional mojo relies on citrus and garlic, so no sugar is needed.

What cut of pork is best?

Pork shoulder (pork butt) is best for shredded pork because it becomes tender and juicy in the pressure cooker.

Can I make this in a slow cooker?

Yes — cook on low for 8 hours or high for 4–5 hours for similar shredded pork results.
