Easy Taco Bake

Ingredients
  

  • 1 lb ground beef
  • ½ onion chopped
  • 1 tablespoon minced garlic
  • 1 packet taco seasoning about 1 oz or 2–3 tbsp
  • 1 10 oz can diced tomatoes
  • 2 large eggs
  • ¼ –½ cup sliced olives
  • 1 –1½ cups shredded cheese cheddar or Mexican blend
  • Salt + pepper to taste

Method
 

  1. Cook ground beef in a skillet over medium heat until browned. Drain excess grease.
  2. Add chopped onion and cook for about 3 minutes.
  3. Add garlic and cook for another 1–2 minutes.
  4. Stir in taco seasoning and mix well with the beef.
  5. Transfer the beef mixture to a baking dish.
  6. Add diced tomatoes and mix.
  7. Add eggs and stir until combined.
  8. Mix in olives.
  9. Top with shredded cheese.
  10. Bake at 350°F for 30–35 minutes until the center is set.
  11. Let sit for 5 minutes before serving.
