  5. Add 2–3 tablespoons of cheese filling to the center. Fold bottom up, sides in, and roll tightly like a blintz.
  6. Whisk eggs, milk, cinnamon, and sweetener until combined.
  7. Quickly dip each filled blintz or lightly brush with egg mixture.
  8. Step 6: Cook Over Medium Heat
  9. Place seam-side down in a buttered pan. Cook 2–3 minutes per side until golden brown.
