Notes

We tested this recipe with both a diluted glaze and a no-water glaze, and found that removing the water creates a thicker, more concentrated sauce that coats the pork belly better. For best results, cook the glaze on low heat and stir continuously to prevent burning, since it thickens quickly without added liquid.

Tips for Best Results

  • Pat pork belly dry before cooking for crispiness
  • Do not overcrowd the pan or air fryer
  • Use low heat when making the glaze
  • Stir constantly to avoid burning
  • If sauce gets too thick, add 1–2 tbsp water

Variations & Substitutions

  • Spicy glazed pork belly: Add chili flakes or sriracha
  • Extra saucy version: Double the sauce ingredients
  • Soy-free option: Use coconut aminos
  • Garlic-heavy version: Add more garlic
  • Air fryer only: Skip oven and cook fully in air fryer
Can you make glazed pork belly without water in the sauce?

Yes. This version uses no water for a thicker, more concentrated glaze, but it must be cooked on low heat to prevent burning.

How do you thicken glazed pork belly sauce?

Reduce the sauce over low heat or skip adding water for a naturally thicker glaze.

 Why is my glaze burning?

The heat may be too high. Cook on low–medium heat and stir constantly.

Can I make this in the air fryer?

Yes. Cook pork belly at 375°F for 18–22 minutes, then toss in the glaze on the stovetop.
