Notes

We tested this recipe with several different pasta options and found that using just 1 cup of cooked low-carb shell pasta keeps the soup hearty while helping reduce the overall carbohydrate content. Freshly grated Parmesan melts more smoothly than pre-shredded cheese and creates the creamiest texture.

Tips for Best Results

  • Freshly grate the Parmesan for the smoothest soup.
  • Keep the soup at a gentle simmer after adding the dairy—avoid boiling.
  • Rotisserie chicken makes this recipe faster and adds great flavor.
  • Add the cooked pasta at the end so it doesn’t absorb too much broth.
  • If reheating leftovers, add a splash of chicken broth or heavy cream to loosen the soup.

Variations & Substitutions

  • Substitute cooked shredded chicken breast for rotisserie chicken.
  • Leave out the mushrooms if preferred.
  • Add chopped kale instead of spinach.
  • Replace mozzarella with provolone or fontina for a different cheesy flavor.
  • Use gluten-free or another low-carb shell pasta if needed.
Is this Marry Me Soup diabetic-friendly?

Yes. This recipe uses only 1 cup of cooked low-carb shell pasta and is balanced with protein from chicken and cheese plus healthy fats from heavy cream, making it a more blood sugar-friendly option than many traditional creamy pasta soups.

Can I use regular pasta?

Yes. Small shells, ditalini, or elbow macaroni all work well. If using regular pasta, cook it separately and stir it into the soup before serving.

Can I freeze this soup?

Cream-based soups can separate after freezing. For the best texture, refrigerate leftovers for up to 4 days instead.

Can I make this without mushrooms?

Absolutely. Simply omit them without making any other changes.
